Celebrating Pi(e) Day with Chorizo Quiche from The Williamsburg Winery

Pi Day is an annual celebration of the mathematical constant.

But around Wessex Hundred, and especially at The Gabriel Archer Tavern, you know what else is constant?

Quiche.

If you want to take a taste of The Williamsburg Winery home in honor of Pi Day – or any day, for that matter – enjoy this Chorizo Quiche recipe, brought to you by Chef de Cuisine David McClure.

Enjoy!

What you’ll need:

  • 5 extra large eggs

  • 1/2 quart heavy cream

  • 1 tablespoon kosher salt

  • 1 tablespoon black pepper

  • 1.5 cups shaved manchego

  • 1 cup cherry tomatoes, whole

  • 1.5 cups diced cured chorizo (can also substitute or ground chorizo, fully cooked)

  • 1/2 cup diced shallots

  • 1/2 cup ground garlic

  • 9-inch pie shell (unbaked)

What you’ll do:

  • Preheat oven to 350 degrees.

  • In a mixing bowl, whisk salt, pepper, cream and eggs together.

  • Place the other ingredients in the pie shell.

  • Cover the ingredients with the whisked eggs and cream, pouring slowly.

  • Carefully stir filling to be evenly distributed.

  • Place pie on a sheet tray and cook for an hour and a half, or until middle of pie is fully cooked.

  • Serve with greens dressed with your favorite dressing, fresh vegetables…and of course, paired with wine!
